This almost black, 10-12” long veggie differs from regular eggplant only in its long and slender size and shape. This perennial is great for grilling and roasting and performs well even at cooler temperatures. The Ichiban Eggplant grows 1½-5’ tall with large coarsely lobed leaves that are 4-8” long. Flowers are white to purple and stems are spiny. Ichiban Eggplants should be picked when they develop color but before shine is lost. Use a sharp knife or shears when cutting off the eggplant and be sure to leave 1” of stem. Put your plant in full sun and give it plenty of water to reach its full potential.
